Super Simple Mediterranean Kale Salad

This super simple Mediterranean kale salad recipe is a delicious and healthy dish that is perfect for any occasion. The salad is a perfect balance of flavors and textures, with the earthy kale and sweet tomatoes complemented by savory hummus and the crunch of the onions. It's a great way to get your daily dose of greens and it's so easy to make ahead. Enjoy it as a side dish or as a light lunch.

Ingredients:

  • 1 head of Kale
  • Handful of cherry tomatoes
  • 1 can of Chickpeas
  • 1 small red onion
  • Feta cheese 
  • Hummus of choice
  • Balsamic Dressing
  • Olive Oil
  • Salt
  • Pepper

Instructions:

  1. Start by massaging your kale with olive oil until leaves and bright and shiny.
  2. Next, prep your toppings by dicing the red onion, cutting your cherry tomatoes in half and cubing your feta cheese.
  3. To prepare your canned chickpeas simply drain and rinse under cold water.
  4. Fill your U-konserve container with a bed of kale (salt and pepper to taste) and place desired amount of toppings.
  5. Finish off your salad with a scoop of your favorite hummus. For an extra touch use the back of your spoon to create a small crater to fill with olive oil.
  6. Lastly, dress your salad with a balsamic dressing.
  7. Enjoy!
